Instructions

  1. Score the skin of the chicken.

  1. Smoke indirectly in a kettle using a whole basket of briquettes for 10 minutes while making the glaze.

  2. Combine: orange, honey, cranberry sauce and mustard.

  3. Brush on the glaze every 10 minutes until the chicken reaches 74˚C internal.

    Rest for 5 minutes.

    Dig in.
