HOT AND FAST KETTLE PORK BELLY STRIPS

Instructions

  1. Light a chimney filled with charcoal.

  2. Once the charcoal is glowing, pour into your kettle BBQ and top with a chunk of your favourite smoking wood.

  3. Slice the pork belly into strips, use the Grill Society Carolina Gold BBQ Sauce as a binder, and season with Grill Society Sweet Memphis BBQ Rub.

  4. Let the grill plate get hot, put the pork belly directly over the coals for 3-5 minutes or until they have a bit of char.

  5. Then move to the outer sides of the BBQ to cook indirectly until the internal temperature reaches at least 70˚C.

  6. Remove from the BBQ, top with more Grill Society Carolina Gold BBQ Sauce and dig in!
