Instructions

  1. Remove the rind from the ham.

  2. Score the fat cap in a diamond pattern.

  3. Use maple syrup and hot honey as a binder.

  4. Smoke or oven bake for 2-2.5 hours at 135˚C until golden brown.

  5. Place the ham into a baking dish.

  6. Add in half a cup of beef stock, more maple syrup and honey, sprinkle with brown sugar and more Grill Society Sweet Memphis BBQ Rub.

  7. Wrap tightly and put back into the smoker or oven until fully probe tender (around another 2.5-3 hours).

  8. Remove and rest for 5 minutes and shred with all of the pan juices.

    Dig in.
