CHICKEN SOUVLAKI RECIPE
FOR CHICKEN SKEWERS:
• 700g chicken thighs (or protein/vegetable of choice)
• 2 tbsp olive oil
• ¼ cup lemon juice
• 3 garlic cloves, finely sliced
• 2 tbsp Grill Society Souvlaki Blend BBQ Rub
• 8 Skewers
TO SERVE:
Flat bread, Sliced tomato, Sliced cucumber, Chopped lettuce, Optional grated cheese.
Prep chicken by dicing into cubes. Add olive oil, lemon juice, garlic cloves and Grill Society Souvlaki Blend BBQ Rub into a bowl and mix. Add in the chicken and evenly coat. Cover and leave in fridge to marinate for a minimum of 2 hours. Prep skewers by soaking in water (not needed if using metal skewers). Thread marinated chicken onto skewers. Heat BBQ to a high heat. Cook skewers until chicken is cooked through (approx. 3mins each side). TO ASSEMBLE YOUR SOUVLAKI: Add a dollop of tzatziki, some chopped lettuce, sliced red onion, sliced tomato, sliced cucumber and the chicken to flat bread. Enjoy!
